Ingredients

- 1 pound firm tofu
- 1 - eggplant, big slices
- 3 cloves garlic, minced finely
- 1 - eggwhite
- 1 - package no salt added frozen chopped spinach, thawed and drained
- 1-2 teaspoon fresh basil leaves
- 1 jar no-salt added marinara
How To Make eggplant manicotti (diabetic)

Step 1add firm tofu to mixing bowl, Whip tofu garlic and eggwhite (filling)

Step 2Slice eggplant

Step 3preheat oven 400 degrees Line baking sheet with non stick foil or cooking parchment. Bake eggplant 25 minutes until tender remove from oven cool for 10 minutes

Step 4scoop out eggplant pulp and chop into small pieces 1/4 inch to 1/2 inche. add to filling along with drained spinach and basil stir until well blended

Step 5Cook Manicotti shells according to package instructions and drain

Step 6spread think film of marinara sauce on the baking pan, stuff shells loosly with filling top with sauce bake 30-35 minutes at 350 degrees until heated
