Ingredients

    eggs, beaten
  • 1/4 c
    bread crumbs, dry
  • 3/4 can(s)
    carrot, diced
  • 1 c
    seashell pasta
  • 2 c
    spinach, thinly sliced and packed
  • 2 1/2 c
    chicken broth
  • 1 lb
    extra lean ground beef
  • 1 tsp
    basil, dried
  • 2 Tbsp
    parmesan cheese
  • 3 Tbsp
    onions, minced

How to Make Easy Italian Soup

Step-by-Step

  1. Combine beef, egg, bread crumbs, cheese, basil, and onion. Shape mix into 3/4 inch balls; set aside.
  2. In large pot heat on high: chicken broth to a boil, stir in spinach, pasta, carrot and meatballs.
  3. Boil, reduce to medium heat. Cook, stirring frequently at a slow boil for 10 minutes or until pasta is el dente and balls are no longer pink.
  4. Serve hot, sprinkle with cheese.
