Easiest soup I've ever made, very quick and easy.

Ingredients

  • 2 - eggs, beaten
  • 1/4 cup bread crumbs, dry
  • 3/4 can carrot, diced
  • 1 cup seashell pasta
  • 2 cups spinach, thinly sliced and packed
  • 2 1/2 cups chicken broth
  • 1 pound extra lean ground beef
  • 1 teaspoon basil, dried
  • 2 tablespoons parmesan cheese
  • 3 tablespoons onions, minced

How To Make easy italian soup

  • Step 1
    Combine beef, egg, bread crumbs, cheese, basil, and onion. Shape mix into 3/4 inch balls; set aside.
  • Step 2
    In large pot heat on high: chicken broth to a boil, stir in spinach, pasta, carrot and meatballs.
  • Step 3
    Boil, reduce to medium heat. Cook, stirring frequently at a slow boil for 10 minutes or until pasta is el dente and balls are no longer pink.
  • Step 4
    Serve hot, sprinkle with cheese.
