easy, healthy pasta sauce
Who needs a jar of pasta sauce when you know how to whip this up? I make enough to freeze some, then I always have some when my mood strikes me!

Ingredients
- 2 tablespoons olive oil
- 1 - med-lg onion, diced small
- 2-3 tablespoons garlic, minced
- 1 can tomato paste (small can)
- 1 can crushed tomatoes (28oz can)
- 3 tablespoons italian seasoning
- 2 cans v-8 veggie juice (i use low sodium) 5.5oz each
How To Make easy, healthy pasta sauce

Step 1in med stock pot, heat oil over med heat. add onions, cook til soft(to make a easy meat sauce, add a lbs of ground beef and cook til browned, drain off fat before next step)

Step 2add garic, heat thru, don't burn

Step 3add tomato paste, turn up heat to med-high, cook but don't burn the tomato paste

Step 4add crushed tomatoes, seasoning and V-8. (If you want to cook it longer, for a more robust flavor, add an extra can or 2 of v-8)

Step 5Taste, if it needs more of something, nows the time to add it! Bring to a boil

Step 6Reduce heat to lowest setting, cover with a splatter-guard or lid half on

Step 7cook for 20-30 min, stirring every 5-10 min

Step 8pour over your favorite cooked pasta, use to make a pizza bagel, or in a lasagne
