A very easy and healthy soup for those cold nights. Serve w/ fresh Italian bread for a full meal,yum!

Ingredients

  • 1 lb
    turkey sausage, sliced
  • 1 large
    green bell pepper, diced
  • 1
    onion, diced
  • 1
    28 oz can diced tomatoes
  • 2
    8 oz cans tomato sauce
  • 2 c
    lower-sodium chicken broth
  • 3/4 c
    elbow macaroni
  • 3/4 c
    reduced-fat, shredded mozzarella cheese.

How to Make Easy, healthy Italian soup

Step-by-Step

  1. Spray a soup ot w/ cooking spray. Place over medium heat. Add sausages and saute until browned. Add pepper and onions.
  2. Saute until veggies are tender. Add remaining ingredients, except macaroni. Bring to a boil. Add macaroni and cook until pasta is done.
  3. Serve in bowls, sprinkled w/ the cheese.
