This is my favorite Kale Recipe. And the Alfredo sauce is oh so good FOR YOU!

Ingredients

  • 1 box
    quinoa pasta
  • 1 Tbsp
    coconut oil
  • 5-6 large
    fresh kale, chopped (leaves)
  • 5-6 large
    mshrooms (sliced)
  • 1 c
    cashews, unsalted
  • 8-10
    garlic colves
  • 1/2 c
    water

How to Make Braised Kale over Quinoa Pasta (Alfredo)

Step-by-Step

  1. Boil Pasta according to package instructions
  2. Heat coconut oil in skillet, add sliced mushrooms and chopped kale, toss until wilted, add a teaspoon of water and cover...
  3. In a blender, add cashews, garlic, and cover with water, Blend on high for one minute or until it is completely blended to a creamy consistency.
