boursin and grape bruschetta
The combined taste of grapes and Boursin is divine. I purposely left out the basil in this bruschetta because I did not want to overpower the flavor of the cheese.

Ingredients
- 1/4 cup red seedless grapes, sliced in half
- 4 tablespoons diced tomato
- 2 tablespoons diced red onion
- 2 tablespoons diced cucumber
- 1 tablespoon diced red pepper
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon garlic
- 1 teaspoon olive oil
- 2 slices baguette
- 4 teaspoons Boursin cheese
- 1 dash dried parsley flakes

We used the broiler to toast the bread, watching closely so it did not burn.

Step 1In a small bowl, mix tomatoes, red onion, cucumber, red pepper, salt, pepper, garlic powder, and olive oil. In a separate bowl, dice up the grapes. Set both aside.

Step 2Spread 2 tsp Boursin cheese on each baguette slice.

Step 3Toast in a toaster oven for 3-4 minutes, until bread is crispy on both sides.

Step 4Top the bread with the grapes, arranging them to cover the entire slice.

Step 5Spoon the bruschetta mixture over the top. Sprinkle with parsley.
