I have been struggling to find a light and healthy recipe and have not been successful..so I played around and this is the result. This is truly low carb.. approx 7g per serving.

  • 2 large eggplants peeled
  • 2 cups pasta sauce
  • 1 package shredded part skim mazzarella cheese
  • 1/2 cup parmesan cheese, fat-free, shredded

How To Make baked not fried eggplant parmesan

  • Step 1
    SPRAY BAKING SHEET WITH COOKING SPRAY. CUT EGGPLANT INTO 2 INCH SLICES. PLACE ON BAKING SHEET AND BAKE AT 375 FOR 10 MINUTES
  • Step 2
    LAYER IN 8X8 BAKING PAN - 3 LAYERS OF EACH PASTA SAUCE EGGPLANT MAZZARELLA CHEESE PARMESAN CHEESE
  • Step 3
    COVER AND BAKE AT 400 FOR 30 MINUTES.
  • Step 4
    UNCOVER AND CONTINUE BAKING FOR 10 MINUTES.
