Ingredients
- 3 1/2 pounds spaghetti squash
- 1 cup broccoli flowerets
- 1 cup zucchini, sliced
- 1 cup fresh mushrooms, sliced
- 1 cup sliced carrots
- 1 - garlic clove, crushed
- 3/4 teaspoon butter, unsalted
- 1 tablespoon milk
- 1/2 cup parmesan cheese
- 1/4 teaspoon salt
- 1/2 teaspoon italian seasoning
- 1/8 teaspoon coarsely ground pepper
- 1/2 cup part skim ricotta cheese
How To Make almost pasta primavera

Step 1Wash squash; cut in half lengthwise and discard seeds.

Step 2Place squash, cut side down, in a baking dish; add 1/2 inch of water. Heat oven to 350, cover and cook 45 minutes or until squash is fork tender.Drain squash and cool.

Step 3Using a fork remove spaghetti-like strands. Measure 3 cups of strands; set aside. Remove remaining strands for other use.

Step 4Steam vegetables 7 to 10 minutes or until tender; drain well.

Step 5Combine squash strands and vegetables, tossing gently. Cover to keep warm; set aside.

Step 6Saute garlic in butter in a small saucepan; remove from heat. Add milk, cheese, and seasonings to saucepan. Cook over low heat, stirring constantly, until mixture is hot (do not boil).

Step 7Spoon cheese mixture over vegetable mixture, tossing gently. Serve and enjoy!
