Ingredients

  • 3 1/2 pounds spaghetti squash
  • 1 cup broccoli flowerets
  • 1 cup zucchini, sliced
  • 1 cup fresh mushrooms, sliced
  • 1 cup sliced carrots
  • 1 - garlic clove, crushed
  • 3/4 teaspoon butter, unsalted
  • 1 tablespoon milk
  • 1/2 cup parmesan cheese
  • 1/4 teaspoon salt
  • 1/2 teaspoon italian seasoning
  • 1/8 teaspoon coarsely ground pepper
  • 1/2 cup part skim ricotta cheese

How To Make almost pasta primavera

  • Step 1
    Wash squash; cut in half lengthwise and discard seeds.
  • Step 2
    Place squash, cut side down, in a baking dish; add 1/2 inch of water. Heat oven to 350, cover and cook 45 minutes or until squash is fork tender.Drain squash and cool.
  • Step 3
    Using a fork remove spaghetti-like strands. Measure 3 cups of strands; set aside. Remove remaining strands for other use.
  • Step 4
    Steam vegetables 7 to 10 minutes or until tender; drain well.
  • Step 5
    Combine squash strands and vegetables, tossing gently. Cover to keep warm; set aside.
  • Step 6
    Saute garlic in butter in a small saucepan; remove from heat. Add milk, cheese, and seasonings to saucepan. Cook over low heat, stirring constantly, until mixture is hot (do not boil).
  • Step 7
    Spoon cheese mixture over vegetable mixture, tossing gently. Serve and enjoy!
