3 1/2 lb
spaghetti squash
1 c
broccoli flowerets
1 c
zucchini, sliced
1 c
fresh mushrooms, sliced
1 c
sliced carrots
garlic clove, crushed
3/4 tsp
butter, unsalted
1 Tbsp
1/2 c
parmesan cheese
1/4 tsp
1/2 tsp
italian seasoning
1/8 tsp
coarsely ground pepper
1/2 c
part skim ricotta cheese

How to Make Almost Pasta Primavera


  • 1Wash squash; cut in half lengthwise and discard seeds.
  • 2Place squash, cut side down, in a baking dish; add 1/2 inch of water. Heat oven to 350, cover and cook 45 minutes or until squash is fork tender.Drain squash and cool.
  • 3Using a fork remove spaghetti-like strands. Measure 3 cups of strands; set aside. Remove remaining strands for other use.
  • 4Steam vegetables 7 to 10 minutes or until tender; drain well.
  • 5Combine squash strands and vegetables, tossing gently. Cover to keep warm; set aside.
  • 6Saute garlic in butter in a small saucepan; remove from heat. Add milk, cheese, and seasonings to saucepan. Cook over low heat, stirring constantly, until mixture is hot (do not boil).
  • 7Spoon cheese mixture over vegetable mixture, tossing gently. Serve and enjoy!
