Ingredients

  • 3 1/2 lb
    spaghetti squash
  • 1 c
    broccoli flowerets
  • 1 c
    zucchini, sliced
  • 1 c
    fresh mushrooms, sliced
  • 1 c
    sliced carrots
  • 1
    garlic clove, crushed
  • 3/4 tsp
    butter, unsalted
  • 1 Tbsp
    milk
  • 1/2 c
    parmesan cheese
  • 1/4 tsp
    salt
  • 1/2 tsp
    italian seasoning
  • 1/8 tsp
    coarsely ground pepper
  • 1/2 c
    part skim ricotta cheese

How to Make Almost Pasta Primavera

Step-by-Step

  1. Wash squash; cut in half lengthwise and discard seeds.
  2. Place squash, cut side down, in a baking dish; add 1/2 inch of water. Heat oven to 350, cover and cook 45 minutes or until squash is fork tender.Drain squash and cool.
  3. Using a fork remove spaghetti-like strands. Measure 3 cups of strands; set aside. Remove remaining strands for other use.
  4. Steam vegetables 7 to 10 minutes or until tender; drain well.
  5. Combine squash strands and vegetables, tossing gently. Cover to keep warm; set aside.
  6. Saute garlic in butter in a small saucepan; remove from heat. Add milk, cheese, and seasonings to saucepan. Cook over low heat, stirring constantly, until mixture is hot (do not boil).
  7. Spoon cheese mixture over vegetable mixture, tossing gently. Serve and enjoy!
