easy french onion soup

This is a easy version of one of my recipes for french onion soup. I have a longer version, but this is the one I make when I don't have too much time. It's yummy!

Ingredients

  • 3 tablespoons real butter
  • 3 large onions, thinly sliced
  • 6 cups beef broth
  • 1 cup apple cider
  • 1/2 teaspoon pepper
  • 1/2 cup grated parmesan cheese
  • 4 - 1"-thick slices french bread, toasted lightly
  • 1/2 cup shredded swiss cheese

How To Make easy french onion soup

  • Step 1
    In lg soup pot, melt butter over medium heat. Add onions. Cook, stirring occasionally for 25 mins, or until golden.
  • Step 2
    Add broth, apple cider and pepper. Bring to a boil. Reduce heat and simmer on low. Stir in parmesan cheese, cooking until cheese is melted.
  • Step 3
    Heat broiler. Place bread slices on baking sheet. Sprinkle evenly w/ swiss cheese. Broil 3-5 min, or until cheese is melted. Pour soup into serving bowls and top each bowl w/ a slice of french bread.
