This is a easy version of one of my recipes for french onion soup. I have a longer version, but this is the one I make when I don't have too much time. It's yummy!

Ingredients
- 3 tablespoons real butter
- 3 large onions, thinly sliced
- 6 cups beef broth
- 1 cup apple cider
- 1/2 teaspoon pepper
- 1/2 cup grated parmesan cheese
- 4 - 1"-thick slices french bread, toasted lightly
- 1/2 cup shredded swiss cheese
How To Make easy french onion soup

Step 1In lg soup pot, melt butter over medium heat. Add onions. Cook, stirring occasionally for 25 mins, or until golden.

Step 2Add broth, apple cider and pepper. Bring to a boil. Reduce heat and simmer on low. Stir in parmesan cheese, cooking until cheese is melted.

Step 3Heat broiler. Place bread slices on baking sheet. Sprinkle evenly w/ swiss cheese. Broil 3-5 min, or until cheese is melted. Pour soup into serving bowls and top each bowl w/ a slice of french bread.
