I got this recipe from my niece and it's so yummy!

  • 16
    jumbo shrimp, peeled, deveined
  • 8 slice
    thick-cut bacon, halved
  • 1-1/2 lb
    bought coleslaw mix, w/out dressing.
  • 1/4 c
    red wine vinegar
  • 1/4 c
    finely chopped chives, fresh.

How to Make Warm coleslaw w/ shrimp


  1. In lg skillet, over med-high heat, cook bacon until crisp. Place on paper towels to drain. reserve drippings, returning 2 tbsp drippings to skillet.
  2. Add shrimp to skillet and cook, stirring until pink. Remove shrimp from pan. Add coleslaw mix to hot pan. Add 1-2 tbsp drippings to mix. Discard remaining drippings.
  3. Cook slaw mix, stirring over medium heat until slaw mix is wilted. Stir in vinegar and chives. Divide slaw mix onto 4 plates and top evenly w/ shrimp. Top evenly w/ bacon halves and serve.
