tuna thyme sandwich

Healthy, low-carb and low-fat! But still tons of flavor :)

Ingredients

  • 1 - bread roll
  • 1 can light tuna
  • 4-5 sprigs fresh thyme
  • 1 tablespoon soy sauce
  • - juice from half a lemon
  • 4 - capers
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped green onions
  • - handful fresh spinach, roughly chopped
  • 2 slices tomato, diced
  • 2 tablespoons feta cheese, crumbled, low-fat
  • pinch just a pinch of pepper

How To Make tuna thyme sandwich

  • Step 1
    Cut roll in half and hollow out the insides (better to hold your filling and less carbs!). Set aside.
  • Step 2
    Drain tuna. In one bowl, mix together tuna, lemon juice, pepper and 2 capers. Take leafletts of thyme off the stems and mix those in, too.
  • Step 3
    In another bowl, mix mayo, spinach, tomatoes, 2 capers, green onions, feta cheese and soy sauce.
  • Step 4
    Scoop tuna into bread, then top with spinach mayo mix. Enjoy!
