Ingredients
- 1 - bread roll
- 1 can light tuna
- 4-5 sprigs fresh thyme
- 1 tablespoon soy sauce
- - juice from half a lemon
- 4 - capers
- 2 tablespoons mayonnaise
- 1 tablespoon chopped green onions
- - handful fresh spinach, roughly chopped
- 2 slices tomato, diced
- 2 tablespoons feta cheese, crumbled, low-fat
- pinch just a pinch of pepper
How To Make tuna thyme sandwich

Step 1Cut roll in half and hollow out the insides (better to hold your filling and less carbs!). Set aside.

Step 2Drain tuna. In one bowl, mix together tuna, lemon juice, pepper and 2 capers. Take leafletts of thyme off the stems and mix those in, too.

Step 3In another bowl, mix mayo, spinach, tomatoes, 2 capers, green onions, feta cheese and soy sauce.

Step 4Scoop tuna into bread, then top with spinach mayo mix. Enjoy!
