    bread roll
  • 1 can(s)
    light tuna
  • 4-5 sprig(s)
    fresh thyme
  • 1 Tbsp
    soy sauce
  • ·
    juice from half a lemon
  • 4
  • 2 Tbsp
  • 1 Tbsp
    chopped green onions
  • ·
    handful fresh spinach, roughly chopped
  • 2 slice
    tomato, diced
  • 2 Tbsp
    feta cheese, crumbled, low-fat
  • pinch
    just a pinch of pepper

How to Make Tuna Thyme Sandwich


  1. Cut roll in half and hollow out the insides (better to hold your filling and less carbs!). Set aside.
  2. Drain tuna. In one bowl, mix together tuna, lemon juice, pepper and 2 capers. Take leafletts of thyme off the stems and mix those in, too.
  3. In another bowl, mix mayo, spinach, tomatoes, 2 capers, green onions, feta cheese and soy sauce.
  4. Scoop tuna into bread, then top with spinach mayo mix. Enjoy!
