WASH POTATOES THOROUGHLY. PAT DRY AND OIL SKINS. (WE LIKED TO EAT THE SKINS SO I MAKE SURE THEY ARE CLEANED). POKE HOLES IN POTATOES AND BAKE AT 400 DEGREES FOR APPROX 45 MINUTES. SAUTE ONION AND CELERY IN BUTTER FOR 5 MINUTES OR TILL SOFT, ADD TO TUNA ALONG WITH OTHER INGREDIENTS.WHEN POTATOES ARE SOFT,SPLIT OPEN AND ADD TUNA MIXTURE; TOP WITH REMAINING CHEESE AND BACON BITS. BAKE FOR APPROX 15 MINUTES OR UNTIL MIXTURE IS HOT AND BUBBLY AND CHEESE IS MELTED. SERVE WITH SOUR CREAM.
