Ingredients For tilapia/snapper vera cruz style

4 8oz filtilapia fillets

1 mdpoblano
-
1 mdanaheim pepper or green bell pepper

1 smjalepeno pepper
-
1 mdspanish onion
-
14oz canfire roasted tomatoes
-
1/4 colive oil
-
1/2 cchopped spanish olives with pimentos
-
1/4 ccapers well drained
-
2 mdbay leaves, dried
-
2 Tbspdried oregano
-
1 tspkosher salt
-
1 tspblack or white pepper
-
4 cloveminced garlic
-
1 tspchipotle chili powder
How To Make tilapia/snapper vera cruz style

1Add oil to large skillet and pre-heat. Salt and pepper the filets and place in heated pan and lightly saute on both sides. Place the filets in a oiled oven dish and set aside.

2Chop the onion and add to the pan used to cook the fish and cook on medium heat.

3Add the minced garlic and chopped peppers to the pan and cook for approximately 5-8 minutes.

4Add the tomatoes,oregano,bay leaves,salt,chili powder and pepper to the pan and bring to a boil. Then reduce and simmmer for 10 minutes

5Add the chopped olives and drained capers and simmer for 5 minutes.

6Pour the tomato/pepper mixture on top of the fish filets and cook in a 350 degree oven for 10 minutes

7Serve hot and add your favorite cheese if desired
