the best fish tacos

I love these tacos mostly because of the trick to put guacamole between a soft and a hard taco shell- not only tastes perfect with guacamole on every bite, but it keeps everything from falling out or apart. Ingredients

  • 1 cup guacamole (see link for easy homemade recipe)
  • 8 - soft tortillas (6 inch)
  • 8 - taco shells
  • 1 bag broccoli slaw (12 oz)
  • 1/3 cup vinaigrette salad dressing
  • - the juice of one lime
  • 1/4 cup chopped cilantro
  • 1 package taco seasoning mix
  • 4 - tilapia fillets (about a pound)
  • 1 tablespoon canola oil
  • 1 cup crumbled feta (optional)

How To Make the best fish tacos

  • Step 1
    Heat tortillas so they are pliable, and taco shells so they are crunchy. Toss broccoli slaw, cilantro, vinaigrette and lime juice. Set aside.
  • Step 2
    Heat oil in skillet over medium heat. Rinse fish and pat dry. Coat both sides fish with taco seasoning. Cook fish in oil 6 minutes, until it flakes easily. flip once. Divided into 8 pieces.
  • Step 3
    Spread tortilla with about 2 TB guacamole. Place taco shell in center and fold sides to match the shell. Place about 1/4 cup broccoli slaw in shell. Place one fish piece over slaw and top with 1 TB cheese. Repeat. Enjoy!
