We love Thai flavors (not hot chiles though) and always have albacore canned tuna on hand. We came up with this as a flavorful new twist on typical tuna salad.

albacore tuna
1/4 c
scallions chopped
1/4 c
fresh cilantro chopped
1/8 c
1/8 c
plain non-fat yogurt (thick greek style good)
3 Tbsp
lemon juice
2 slice
whole grain toast (sourdough is great!)
2 Tbsp
peanut butter

How to Make Thai Tuna Open-faced Sandwich


  • 1Mix tuna through lemon juice together. Toast bread while mixing. Spread with your favorite peanut butter (as thick or thin as you like).
  • 2Top peanut-butter toast with tuna mixture. Garnish with cilantro for pretty presentation. Eat with hands or forks - your choice.
  • 3Makes fun appetizer on crackers with peanut butter, too. People will be amazed at the flavor pairings, but it's always a hit.
