We love Thai flavors (not hot chiles though) and always have albacore canned tuna on hand. We came up with this as a flavorful new twist on typical tuna salad.

Ingredients
- 1 7 oz. cans albacore tuna
- 1/4 cup scallions chopped
- 1/4 cup fresh cilantro chopped
- 1/8 cup mayonnaise
- 1/8 cup plain non-fat yogurt (thick greek style good)
- 3 tablespoons lemon juice
- 2 slices whole grain toast (sourdough is great!)
- 2 tablespoons peanut butter
How To Make thai tuna open-faced sandwich

Step 1Mix tuna through lemon juice together. Toast bread while mixing. Spread with your favorite peanut butter (as thick or thin as you like).

Step 2Top peanut-butter toast with tuna mixture. Garnish with cilantro for pretty presentation. Eat with hands or forks - your choice.

Step 3Makes fun appetizer on crackers with peanut butter, too. People will be amazed at the flavor pairings, but it's always a hit.
