sweet and sour shrimp stir-fry

I am trying to make some healthier versions of recipes I like, using ingredients I have on hand. This is a very easy recipe but tastes very good. Great served with your favorite steamed rice or whole wheat noodles. These pictures from the internet are not mine but just used to show you howthe finished product should look.

Ingredients

  • 3 tablespoons peanut oil
  • 1/2 pound large shrimp, peeled, deveined, tail on
  • 1 tablespoon fresh, grated ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 medium onion, cut into 4 wedges
  • 2 ounces canned pineapple, blended with 7 ounces pineapple juice
  • 1 small red bell pepper, cut into 1-inch pieces
  • 1 - handful of snow peas
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon honey, or to taste
  • 1 - lime, juiced, or to taste
  • 1 - 2 - green onions, thinly sliced

How To Make sweet and sour shrimp stir-fry

  • Step 1
    Heat a heavy, non-stick skillet or wok over high heat, add 2 tablespoons peanut oil.
  • Step 2
    Stir-fry the shrimp until they turn pink, 2 or 3 minutes. Remove from pan and set aside.
  • Step 3
    Heat the remaining oil; add the ginger, onions and red pepper flakes; stir-fry until the onions are tender-crisp, another 2 or 3 minutes.
  • Step 4
    Add the pineapple puree and let the sauce reduce for 1 minute.
  • Step 5
    Add the bell pepper pieces and snow peas. Stir gently. Season with salt, black pepper, lime juice, and honey to taste.
  • Step 6
    Cook, stirring constantly, for another 2 minutes.
  • Step 7
    Return the shrimp to the pan, stir well, and sprinkle with the finely sliced spring onion.
  • Step 8
    Serve immediately with your favorite rice.
