Ingredients
- 4 - 4 oz flounder or sole fillets
- 1 - 10 oz pkg frozen chopped spinach
- 1 teaspoon minced garlic
- 1 teaspoon olive oil
- 1/3 cup crumbled feta cheese
- 1/2 cup herb seasoned stufffing mix
- 2 tablespoons lemon juice
- 1 teaspoon dried dillweed
How To Make spinach-stuffed flounder

Step 1Heat oven to 350. Spray a rectangular pan w/ cooking spray. Rinse fish and pat dry w/ paper towels. Cook spinach as directed, cool, drain and squeeze dry.

Step 2Cook garlic in oil in skillet until tender. Remove from heat. Add spinach, feta cheese, stuffing mix, 1 tbsp lemon juice and dillweed. Mix well. Spoon 1/3 of mix onto each piece of fish.

Step 3Roll up fish around stuffing mix. Place fish, seam-side down into pan. Brush fish w/ remaining lemon juice. Bake, uncovered for about 20 min, or until fish flakes easily.
