Ingredients For spinach-stuffed flounder

  • 4
    4 oz flounder or sole fillets
  • 1
    10 oz pkg frozen chopped spinach
  • 1 tsp
    minced garlic
  • 1 tsp
    olive oil
  • 1/3 c
    crumbled feta cheese
  • 1/2 c
    herb seasoned stufffing mix
  • 2 Tbsp
    lemon juice
  • 1 tsp
    dried dillweed

How To Make spinach-stuffed flounder

    Heat oven to 350. Spray a rectangular pan w/ cooking spray. Rinse fish and pat dry w/ paper towels. Cook spinach as directed, cool, drain and squeeze dry.

    Cook garlic in oil in skillet until tender. Remove from heat. Add spinach, feta cheese, stuffing mix, 1 tbsp lemon juice and dillweed. Mix well. Spoon 1/3 of mix onto each piece of fish.

    Roll up fish around stuffing mix. Place fish, seam-side down into pan. Brush fish w/ remaining lemon juice. Bake, uncovered for about 20 min, or until fish flakes easily.
