spicy tilapia fillets

I was getting tired of the same way of making fish, so I added some Italian ingredients and it came out awesome. It's a little spicy, but that's how I like my food=)

Ingredients
- 2 sticks olive oil
- 2 - red bell peppers, cut into strips
- 1 - onion, sliced thin
- 1 - 14-1/2 oz can diced tomatoes w/ chiles
- 1/2 teaspoon oregano
- 1/2 teaspoon bottled hot sauce
- 4 - tilapia fillets
- 1/2 teaspoon each salt & pepper
- 2 cups hot cooked rice
How To Make spicy tilapia fillets

Step 1Heat oven to 350. Spray a baking dish w/ cooking spray. Heat oil in lg skillet over medium heat. Add bell peppers and onion. Cook, stirring for 4 mins.

Step 2Add tomatoes and oregano, cook 3 mins, or until heated through. Stir in hot sauce. Place fillets in baking pan. Top fish w/ tomato mix. Season w/ salt and pepper.

Step 3Bake 25 min, or until fish flakes easily.
