Ingredients
- 2 pounds salmon fillet
- 2 cups red potatoes, cubed
- 1 cup carrot, sliced
- 1 cup fresh green beans
- 1 cup leeks, sliced
- 1/4 cup soy sauce (i use reduced sodium)
- 1/4 cup olive oil
- 1 tablespoon dill, fresh or dried
- 1/2 tablespoon basil
- - salt & pepper to taste
How To Make soy & dill salmon with veggies

Step 1Preheat oven to 450 degrees. Boil the potatoes, carrots, and lastly the green beans until just tender. Remove with slotted spoon.

Step 2In a small bowl, mix soy sauce, olive oil, herbs, and salt and pepper. Lay a large sheet of aluminum foil on a rimmed baking sheet. Fold up edges of foil to sauce doesn't spill.

Step 3Place salmon fillet in middle of the foil, evenly distribute cooked vegetables and leeks around and over the salmon. Pour soy sauce mixture over everything.

Step 4Fold edges of the foil tightly, creating a packet. Cook for 20 to 30 minutes or until the salmon is done.
