This is a wonderfully tasty, healthy, and simple dinner. It can be prepped ahead of time for a speedy meal.

Ingredients

  • 2 pounds salmon fillet
  • 2 cups red potatoes, cubed
  • 1 cup carrot, sliced
  • 1 cup fresh green beans
  • 1 cup leeks, sliced
  • 1/4 cup soy sauce (i use reduced sodium)
  • 1/4 cup olive oil
  • 1 tablespoon dill, fresh or dried
  • 1/2 tablespoon basil
  • - salt & pepper to taste

How To Make soy & dill salmon with veggies

  • Step 1
    Preheat oven to 450 degrees. Boil the potatoes, carrots, and lastly the green beans until just tender. Remove with slotted spoon.
  • Step 2
    In a small bowl, mix soy sauce, olive oil, herbs, and salt and pepper. Lay a large sheet of aluminum foil on a rimmed baking sheet. Fold up edges of foil to sauce doesn't spill.
  • Step 3
    Place salmon fillet in middle of the foil, evenly distribute cooked vegetables and leeks around and over the salmon. Pour soy sauce mixture over everything.
  • Step 4
    Fold edges of the foil tightly, creating a packet. Cook for 20 to 30 minutes or until the salmon is done.
