How to Make Smoked Trout with Yogurt Dill Cucumber Sauce
- Peel the cucumber and slice in half lengthwise. Scoop out the seeds and dice.
- If you prefer to draw the liquid from the cucumbers, place the diced cucumbers in a sieve (over a bowl) and sprinkle with salt. Rinse, drain, and dry thoroughly.
- Combine the cucumber with the yogurt, chopped dill and freshly ground black pepper. Chill the cucumber/yogurt mixture.
- Arrange the trout fillets on plates and spoon the cucumber mixture on one side. Add additional black pepper. Garnish with a dill sprig and serve.
