similiar to tuna wiggle- kedgeree

The grandchildren love to tease their grandfather Paul, a/k/a "GA". Whenever they invite us to supper, it's usually to have TUNA WIGGLE. They know this is not his favorite, and he shudders when they suggest it. I cannot help it, I like it! Cooked rice, flaked fish, hard cooked eggs- chopped, cream, salt and pepper! I found an old recipe in a very old New England Cook Book.

Ingredients

  • 1/2 cup cream
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons parsley, minced
  • 2 cups cooked rice
  • 2 cups flaked fish, for example tuna
  • 4 - hard-boiled eggs, chopped

How To Make similiar to tuna wiggle- kedgeree

  • Step 1
    cook the rice, stir in the other ingredients, heat for a few minutes, and serve.
  • Step 2
    I had it with peas and not the chopped eggs, as I recall from Girl Scout camping days, and substituted cream of celey or cream of chicken soup for the real cream.
