shrimp cakes
It's summer time, which means it's time to break out the grill and put some shrimp on the barbie. However, this shrimp recipe calls for grinding up the shrimp and making shrimp cakes, or shrimp sliders. Top it with some mango salsa (or your favorite salsa), or perhaps even some greek yogurt, throw it in a bun (if desired), and enjoy a healthy, fresh, light summer meal.

Ingredients
- 2 cups small or medium raw shrimp, deveined and shells removed
- 2 slices sprouted whole grain bread (can use regular white or wheat as well)
- 2 tablespoons chives, roughly chopped
- 2 tablespoons cilantro, chopped
- 2 cloves garlic, minced
- 1/2 cup celery, finely chopped
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice, fresh
- 2 tablespoons mayonnaise
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 cups your favorite salsa blend (i chop mango, red onion, red pepper, avocado, add black beans, salt and pepper)
- 1 cup greek yogurt (optional)
- 6 - mini buns (optional)
How To Make shrimp cakes

Step 1Using a food processor, blend the bread until it becomes a fine crumb, then transfer to a medium bowl. To that bowl, add the celery, lemon zest, lemon juice, mayo, and salt and pepper.

Step 2Next, add the shrimp, cilantro, chives and garlic to the food processor and pulse until it becomes a textured paste.

Step 3Add the shrimp mixture to the bowl and stir to combine.

Step 4Form small patties and refrigerate for at least 20 minutes. Meanwhile, preheat the grill to a medium heat. You can also use a frying pan over the stove. When grill is ready, spray cooking oil on the patties (or oil your grill) and cook for approximately 3-5 minutes per side, until they are a crispy golden brown.

Step 5Remove and serve on a bun, or naked with your favorite salsa or yogurt blend.
