Shrimp Cakes

Ingredients

2 csmall or medium raw shrimp, deveined and shells removed

2 slicesprouted whole grain bread (can use regular white or wheat as well)

2 Tbspchives, roughly chopped

2 Tbspcilantro, chopped

2 clovegarlic, minced

1/2 ccelery, finely chopped

1 tsplemon zest

2 Tbsplemon juice, fresh

2 Tbspmayonnaise

3/4 tspkosher salt

1/2 tspblack pepper

3 cyour favorite salsa blend (i chop mango, red onion, red pepper, avocado, add black beans, salt and pepper)

1 cgreek yogurt (optional)
-
6mini buns (optional)
How to Make Shrimp Cakes
- Using a food processor, blend the bread until it becomes a fine crumb, then transfer to a medium bowl. To that bowl, add the celery, lemon zest, lemon juice, mayo, and salt and pepper.
- Next, add the shrimp, cilantro, chives and garlic to the food processor and pulse until it becomes a textured paste.
- Add the shrimp mixture to the bowl and stir to combine.
- Form small patties and refrigerate for at least 20 minutes. Meanwhile, preheat the grill to a medium heat. You can also use a frying pan over the stove. When grill is ready, spray cooking oil on the patties (or oil your grill) and cook for approximately 3-5 minutes per side, until they are a crispy golden brown.
- Remove and serve on a bun, or naked with your favorite salsa or yogurt blend.
