This shrimp and spaghetti squash is a quick and easy meal. The delicate shrimp are a tasty compliment to the buttery spaghetti squash. Fresh onions, bell pepper, and garlic add tons of flavor. We also added an extra sprinkle of Old Bay seasoning and it was delicious. It's a healthier weeknight dinner your family will love.

Ingredients
- 1 small spaghetti squash
- 1/2 cup chopped onion
- 1 small green pepper, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- 2 teaspoons Old Bay seasoning
- 1 teaspoon coarse sea salt
- 1/2 pound jumbo shrimp, cooked and cleaned
How To Make shrimp and spaghetti squash

Step 1Split the spaghetti squash in half and remove the seeds.

Step 2Pierce the outside of the squash. Place in a microwave-safe dish face down in a little bit of water.

Step 3Cover and microwave for 9-10 minutes.

Step 4While the squash is cooking, saute chopped onions and peppers in olive oil. Cook until soft.

Step 5Add garlic, Old Bay, salt, and shrimp. Saute until vegetables are soft and the shrimp is heated; usually 5 minutes.

Step 6Once the squash has cooled a little, peel it out of the skin with a fork.

Step 7Place cooked squash on a serving dish. Top with the shrimp mixture.
