Ingredients
- 5 pounds jumbo shrimp, peeled, deveined
- - salt and pepper to taste
- 1 tablespoon minced lemongrass
- 1/2 cup olive oil
- 3 small onions, diced
- 4 tablespoons minced garlic
- 1 - celery stalk, diced
- 1 medium red bell pepper, diced
- 5 pounds heirloom tomatoes, peeled and chopped
- 1 - bayleaf
- 1/4 teaspoon ground allspice
- 1 tablespoon crushed red pepper flakes
- 2 tablespoons fresh basil, chopped
- 6 cups rice, cooked
How To Make sherry's shrimp creole

Step 1Place shrimp in lg bowl, sprinkle w/ salt, pepper and lemongrass. Heat 1/4 cup oil in lg skillet over medium heat. Add shrimp and saute until pink.

Step 2Remove shrimp from skillet. Add remaining oil to skillet. Add onion, garlic, celery and red bell peppers. Cook, stirring for 2 mina. Add tomatoes. Reduce heat to med-low. Simmer for 5 mins. Add bayleaf, allspice and red pepper flakes. Simmer, stirring for 10 mins.

Step 3Place shrimp back in skillet and basil. Cook 2 mins. Remove bayleaf. Serve over rice.
