5 lb
jumbo shrimp, peeled, deveined
salt and pepper to taste
1 Tbsp
minced lemongrass
1/2 c
olive oil
3 small
onions, diced
4 Tbsp
minced garlic
celery stalk, diced
1 medium
red bell pepper, diced
5 lb
heirloom tomatoes, peeled and chopped
1/4 tsp
ground allspice
1 Tbsp
crushed red pepper flakes
2 Tbsp
fresh basil, chopped
6 c
rice, cooked

How to Make Sherry's shrimp creole


  • 1Place shrimp in lg bowl, sprinkle w/ salt, pepper and lemongrass. Heat 1/4 cup oil in lg skillet over medium heat. Add shrimp and saute until pink.
  • 2Remove shrimp from skillet. Add remaining oil to skillet. Add onion, garlic, celery and red bell peppers. Cook, stirring for 2 mina. Add tomatoes. Reduce heat to med-low. Simmer for 5 mins. Add bayleaf, allspice and red pepper flakes. Simmer, stirring for 10 mins.
  • 3Place shrimp back in skillet and basil. Cook 2 mins. Remove bayleaf. Serve over rice.
