seafood essentials: awesome baked bbq cod

The is an easy/peasy recipe to assemble, and have on the table in under an hour. The sauce does have a lot of bits to it, but they are simple items, and can be assembled in a matter of minutes. Serve with some buttered rice, and you have a plate of total comfort food. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 medium cod filets, about 6 ounces (170g) each
  • THE SAUCE
  • 1/2 cup yellow onion, chopped
  • 1 tablespoon grapeseed oil
  • 1 tablespoon sweet butter, unsalted
  • 8 ounces tomato sauce
  • 1/4 cup filtered water
  • 1/3 cup coconut sugar, or brown sugar
  • 1/4 - apple cider vinegar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon dehydrated onions, crushed to a powder
  • 1 teaspoon salt, kosher variety, fine grind
  • 1 teaspoon mustard powder
  • 1/2 teaspoon prepared horseradish
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper, freshly ground
  • 1 pinch ground cinnamon
  • ADDITIONAL ITEMS
  • - freshly grated parmesan cheese, for topping

    PREP/PREPARE
  • Step 2
    The recipe photos show only one filet, in a single-serve dish. Since I was making the sauce for the first time, I did not want to waste food; however, the amount of sauce that this recipe makes will be enough for 3; possibly 4 medium-size filets.
  • Step 3
    Does it have to be cod? Heck no, choose any fish you fancy. I am even thinking that this would go great with shrimp.
  • Step 4
    For presentation purposes, I am using single-serving All-Clad ovenproof skillets, but you could just as easily bake them all up a large skillet. And, now that I am thinking about it, small cast-iron skillets would be brilliant.
  • Step 5
    Gather your Ingredients (mise en place).
  • Step 6
    Add the oil and butter to a saucepan over medium heat.
  • Step 7
    When the butter melts and stops foaming, give the pan a swirl to mix the oil and butter, and add the chopped onions.
  • Step 8
    Add a slight pinch of salt, and cook, until the onions soften, but not brown, about 3 – 5 minutes.
  • Step 9
    Add the remaining sauce ingredients, and bring up to a simmer.
  • Step 10
    Stir and simmer, until the sauce begins to thicken, about 15 – 18 minutes.

    Chef’s Note: If the sauce appears too thin, just leave it on the burner for a bit more time. Just make sure that you stir it, to keep it from sticking to the bottom of the pan.
  • Step 12
    Place a rack in the middle position, and preheat the oven to 350f (175c).
  • Step 13
    Sprinkle the filets with a bit of salt and pepper, lightly oil a skillet over medium-high heat, and sear the cod for about 60 seconds on each side, then cover with the sauce.
  • Step 14
    Place in the oven, and bake until the filets are fully cooked, and flakes easily, about 15 – 18 minutes.
