How To Make seafood essentials: awesome baked bbq cod
-
Step 1PREP/PREPARE
-
Step 2The recipe photos show only one filet, in a single-serve dish. Since I was making the sauce for the first time, I did not want to waste food; however, the amount of sauce that this recipe makes will be enough for 3; possibly 4 medium-size filets.
-
Step 3Does it have to be cod? Heck no, choose any fish you fancy. I am even thinking that this would go great with shrimp.
-
Step 4For presentation purposes, I am using single-serving All-Clad ovenproof skillets, but you could just as easily bake them all up a large skillet. And, now that I am thinking about it, small cast-iron skillets would be brilliant.
-
Step 5Gather your Ingredients (mise en place).
-
Step 6Add the oil and butter to a saucepan over medium heat.
-
Step 7When the butter melts and stops foaming, give the pan a swirl to mix the oil and butter, and add the chopped onions.
-
Step 8Add a slight pinch of salt, and cook, until the onions soften, but not brown, about 3 – 5 minutes.
-
Step 9Add the remaining sauce ingredients, and bring up to a simmer.
-
Step 10Stir and simmer, until the sauce begins to thicken, about 15 – 18 minutes.
-
Step 11Chef’s Note: If the sauce appears too thin, just leave it on the burner for a bit more time. Just make sure that you stir it, to keep it from sticking to the bottom of the pan.
-
Step 12Place a rack in the middle position, and preheat the oven to 350f (175c).
-
Step 13Sprinkle the filets with a bit of salt and pepper, lightly oil a skillet over medium-high heat, and sear the cod for about 60 seconds on each side, then cover with the sauce.
-
Step 14Place in the oven, and bake until the filets are fully cooked, and flakes easily, about 15 – 18 minutes.
-
Step 15PLATE/PRESENT
-
Step 16I like to serve this rustic style, surrounded by bowls of various sides. Enjoy.
-
Step 17Keep the faith, and keep cooking.
