Ingredients
- 4 ounces salmon fillet
- 1/4 cup olives - sliced
- 1/4 cup lettuce leaves - or spinach - ribboned
- 1 dash salt and pepper, seasoning to taste
- 1 tablespoon lemon or lime juice
- 1 teaspoon fresh garlic
- 1/4 teaspoon fresh basil - ribboned
- 2 tablespoons olive oil, extra virgin
How To Make sauteed salmon with lettuce and olives

Step 1Saute garlic in olive oil, add olives, basil and lettuce and cook until lettuce starts to wilt.

Step 2Add salmon and cook until no longer pink in the middle. Add lemon juice and seasoning to taste.

Step 3Serve with wild rice pilaf as a side.
