Ingredients For sauteed salmon with lettuce and olives

  • 4 oz
    salmon fillet
  • 1/4 c
    olives - sliced
  • 1/4 c
    lettuce leaves - or spinach - ribboned
  • 1 dash
    salt and pepper, seasoning to taste
  • 1 Tbsp
    lemon or lime juice
  • 1 tsp
    fresh garlic
  • 1/4 tsp
    fresh basil - ribboned
  • 2 Tbsp
    olive oil, extra virgin

How To Make sauteed salmon with lettuce and olives

  • 1
    Saute garlic in olive oil, add olives, basil and lettuce and cook until lettuce starts to wilt.
  • 2
    Add salmon and cook until no longer pink in the middle. Add lemon juice and seasoning to taste.

    Serve with wild rice pilaf as a side.
