Ingredients

  • 4 ounces salmon fillet
  • 1/4 cup olives - sliced
  • 1/4 cup lettuce leaves - or spinach - ribboned
  • 1 dash salt and pepper, seasoning to taste
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon fresh garlic
  • 1/4 teaspoon fresh basil - ribboned
  • 2 tablespoons olive oil, extra virgin

How To Make sauteed salmon with lettuce and olives

  • Step 1
    Saute garlic in olive oil, add olives, basil and lettuce and cook until lettuce starts to wilt.
  • Step 2
    Add salmon and cook until no longer pink in the middle. Add lemon juice and seasoning to taste.
  • Step 3
    Serve with wild rice pilaf as a side.
