Ingredients
- 2 tablespoons pine nuts
- 1 1/4 pounds skinless salmon fillets, cut into 1 1/2 inch pieces
- salt and pepper to taste
- 1/4 cup olive oil
- 1/4 cup fresh cilantro, chopped
- 2 teaspoons grated lemon zest
- 4 - pieces lavash or naan bread
How To Make salmon skewers with lemon, pine nut cilantro sauce

Step 1Prepare skewers if using wooden skewers - soak in water to prevent burning. Preheat grill to medium-high heat or heat oven to 350 degrees F.

Step 2Place pine nuts in a skillet and toast until golden brown. Once cooled, chop the pine nuts.

Step 3Season salmon pieces with salt & pepper and then thread them onto the skewers maintaining a little separation for even cooking.

Step 4Grill, turning occasionally, for approximately 4-6 minutes.

Step 5In a small bowl, combine remaining ingredients and mix well. Serve alongside the salmon along with some toasty bread.
