Ingredients

  • 2 tablespoons pine nuts
  • 1 1/4 pounds skinless salmon fillets, cut into 1 1/2 inch pieces
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 2 teaspoons grated lemon zest
  • 4 - pieces lavash or naan bread

How To Make salmon skewers with lemon, pine nut cilantro sauce

  • Step 1
    Prepare skewers if using wooden skewers - soak in water to prevent burning. Preheat grill to medium-high heat or heat oven to 350 degrees F.
  • Step 2
    Place pine nuts in a skillet and toast until golden brown. Once cooled, chop the pine nuts.
  • Step 3
    Season salmon pieces with salt & pepper and then thread them onto the skewers maintaining a little separation for even cooking.
  • Step 4
    Grill, turning occasionally, for approximately 4-6 minutes.
  • Step 5
    In a small bowl, combine remaining ingredients and mix well. Serve alongside the salmon along with some toasty bread.
