One of my family's favorite meatless monday recipes which I found on delish

Ingredients

  • 1 1/4 cups long grain rice, uncooked
  • 1 bunch green onions
  • 1 tablespoon olive oil
  • - pepper to taste
  • 1 pound salmon, skinless filet (cubed into 1 inch chunks)
  • 1/4 cup teriyaki sauce

How To Make salmon pilaf with green onions

  • Step 1
    Prepare rice according to package instructions
  • Step 2
    when rice is about 10 minutes to being done, heat oil in skillet (1 minute or less). Add onions and cook a few minutes, stirring occasionally. Season salmon with pepper. Add salmon to skillet and cook 7-8 minutes until opaque throughout. Remove from heat and spoon off any fat. Leave salmon/onion in skillet.
  • Step 3
    Stir cooked rice and teriyaki sauce until blended. Check seasoning and adjust if needed. Garnish with green onions and serve.
