How to Make Salmon Patties a La Jane

  • 1Drain salmon and pick off the skin and the round crunchy bones. Crumble with your hands.
  • 2Put salmon, 1/2 cup bread crumbs, egg, onion, mayo, lemon juice, horseradish, and seasonings in a large bowl and mix well. The hot sauce is optional, but we like it.
  • 3Form 4 patties with your hands.
  • 4Put the 2/3 cup breadcrumbs on a shallow dish and roll patties in them. Cover and refrigerate for an hour.
  • 5Heat oil in a heavy skillet, and fry salmon patties until browned, turn and brown on the other side.
  • 6Make tartar sauce by mixing up all sauce ingredients, cover and chill until serving time.
