I make salmon patties all the time out of canned salmon. This time I had some salmon that I grilled and there was just the 2 of us, so had some left over. You could add more or less of whatever you like, I seasoned the salmon in the first place, so didn't add tons of seasonings. You might want to add more mayo if you find the mix too dry. With this I usually make some home made tartar sauce.

Ingredients

  • 12 ounces cooked salmon
  • 1/3 cup chopped onion
  • 1/3 cup green part of scallions, chopped (for color and bite)
  • 1 large egg
  • 2 teaspoons minced garlic from jar (timesaver)
  • 1 tablespoon hot horseradish
  • 1/3 cup mayo, more if you want it a little more moist
  • 2/3 cup italian bread crumbs to put in the salmon patties
  • 3/4 cup italian bread crumbs to roll patties in.
  • 2 teaspoons lemon juice
  • - salt and pepper to taste
  • 1 teaspoon dried dill weed.

How To Make salmon patties a la jane #2

  • Step 1
    Put all ingredients in a large bowl except the 3/4 cup bread crumbs.
  • Step 2
    Make 5 to 6 salmon patties.
  • Step 3
    Put the 3/4 cup bread crumbs in a shallow plate, and press the salmon patties on both sides in the crumbs.
  • Step 4
    Scatter some of the crumbs on a platter and place the patties on top of them,
  • Step 5
    Cover and chill for at least one hour.
  • Step 6
    Either heat 1 inch of oil in a fry pan or use a deep fat fryer heated to 350°.
  • Step 7
    Cook til both sides are golden brown.
  • Step 8
    Serve with home made tartar sauce.
