salmon patties 101
First off, what's up with the spelling of salmon? Why do we need that silent L? That always confused me as a child, but delights me as an adult. I suspect the fish could care less. I grew up eating salmon patties served with buttered potatoes and salad with homemade viniagrette, all served on the same plate. I still love that taste combination! This is a basic recipe with some ideas for variations. Mom used cracker crumbs, while I switched to oatmeal, which also sneaks in some fiber. Play around with your spices and make this recipe your own! =^..^=

Ingredients
- some - cooking oil or crisco, if frying
- some - cooking spray, optional
- 1 can salmon
- 1 - egg
- 1/2 cup cracker crumbs, bread crumbs, or uncooked oatmeal
- some - salt and/or pepper, to taste
- some - fresh lemons or lemon juice, optional
- OPTIONS
- some - chopped onion
- some - finely chopped green pepper
- some - prepared horseradish
- some - parsley, dill, paprika, or other spices
- a little - worcestershire sauce or hot sauce
How To Make salmon patties 101

Step 1If you're going to fry the salmon patties, put a small amount of cooking oil or Crisco in the bottom of a frying pan & set it on the heat. Healthy types can pan fry using cooking spray or broil in the oven. Whichever you're doing, prep it now.

Step 2Drain liquid from the salmon and put into a medium mixing bowl. Decide about the bones, which are totally edible & a good source of calcium. Toss them or crumble them up? Your call.

Step 3Add the egg and whatever spices or other options you like.

Step 4Toss in the cracker crumbs (or other filling of choice). Mix together well. (OK, I admit that I use my hands to mix this up, but use a spoon, if it makes you happy.)

Step 5Form into 4 to 6 patties and place into your prepared cooking pan. Frying takes 3 or 4 minutes per side, depending on the oil and/or pan temperature. Broiling might take a little less. (CHECK sooner!)

Step 6In our family, we serve salmon patties with (lots of) lemon juice. Feel free to be a rebel and serve them with ketchup, cocktail sauce, and/or tartar sauce, too. =^..^=

Step 7ANOTHER OPTION: Salmon Loaf Make the mixture a little stiffer with more filler, then press into a loaf pan (already misted with cooking spray). Bake at 350 degrees F. for about 40-45 minutes. Remove from oven & allow to rest for 5 minutes before slicing. Serve with lemon or check out Direction #6 above.
