salmon croquettes

This is a simple nutritious comfort food my whole family loves.

Ingredients

  • BASIC INGREDIENTS
  • 1 can red salmon, 15 oz
  • 1 - egg
  • 1/2 cup almond meal
  • 4 - green onions, sliced (1/4 cup)
  • - (or 1/4 cup finely chopped onion)
  • - salt and pepper to taste
  • - oil for frying
  • - -
  • OPTIONAL EXTRAS
  • 1/4 cup celery, finley chopped
  • 2 tablespoons parsley, chopped fresh (or 1 tsp dried)
  • 1 tablespoon dill weed, chopped fresh (or 1 tsp dried)
  • 1/4 teaspoon paprika
  • 1 clove garlic, minced (or 1/4 tsp granules)
  • 1 tablespoon old bay seasoning
  • - juice from 1 lemon
  • up to 1/4 cup flaxseed meal

How To Make salmon croquettes

  • Step 1
    In a large bowl hand mix ingredients. Form into patties.
  • Step 2
    Heat oil in skillet over medium flame. Saute patties one side at a time until each side is done.
  • Step 3
    Serve hot.
  • Step 4
    The children like ketchup with their croquettes. Haven't tried this sauce yet: 2 T mayonnaise 1 t fresh lemon juice 1 t Dijon mustard 1 T chopped fresh parsley 1 t finely chopped capers 1/2 t minced garlic 1/8 t salt
