Ingredients
- BASIC INGREDIENTS
- 1 can red salmon, 15 oz
- 1 - egg
- 1/2 cup almond meal
- 4 - green onions, sliced (1/4 cup)
- - (or 1/4 cup finely chopped onion)
- - salt and pepper to taste
- - oil for frying

- OPTIONAL EXTRAS
- 1/4 cup celery, finley chopped
- 2 tablespoons parsley, chopped fresh (or 1 tsp dried)
- 1 tablespoon dill weed, chopped fresh (or 1 tsp dried)
- 1/4 teaspoon paprika
- 1 clove garlic, minced (or 1/4 tsp granules)
- 1 tablespoon old bay seasoning
- - juice from 1 lemon
- up to 1/4 cup flaxseed meal
How To Make salmon croquettes

Step 1In a large bowl hand mix ingredients. Form into patties.

Step 2Heat oil in skillet over medium flame. Saute patties one side at a time until each side is done.

Step 3Serve hot.

Step 4The children like ketchup with their croquettes. Haven't tried this sauce yet: 2 T mayonnaise 1 t fresh lemon juice 1 t Dijon mustard 1 T chopped fresh parsley 1 t finely chopped capers 1/2 t minced garlic 1/8 t salt
