Ingredients For salmon croquettes

  • BASIC INGREDIENTS
  • 1 can
    red salmon, 15 oz
  • 1
    egg
  • 1/2 c
    almond meal
  • 4
    green onions, sliced (1/4 cup)
  • (or 1/4 cup finely chopped onion)
  • salt and pepper to taste
  • oil for frying
  • -
  • OPTIONAL EXTRAS
  • 1/4 c
    celery, finley chopped
  • 2 Tbsp
    parsley, chopped fresh (or 1 tsp dried)
  • 1 Tbsp
    dill weed, chopped fresh (or 1 tsp dried)
  • 1/4 tsp
    paprika
  • 1 clove
    garlic, minced (or 1/4 tsp granules)
  • 1 Tbsp
    old bay seasoning
  • juice from 1 lemon
  • up to 1/4 c
    flaxseed meal

How To Make salmon croquettes

  • 1
    In a large bowl hand mix ingredients. Form into patties.

    Heat oil in skillet over medium flame. Saute patties one side at a time until each side is done.

    Serve hot.

    The children like ketchup with their croquettes. Haven't tried this sauce yet: 2 T mayonnaise 1 t fresh lemon juice 1 t Dijon mustard 1 T chopped fresh parsley 1 t finely chopped capers 1/2 t minced garlic 1/8 t salt
