salmon-carrot nuggets
This is one of my toddler's favorite food. She likes it without salt, though. It's good for snacking too. To make it easy, freeze salmon for about 30 minutes prior processing in food processor.

Ingredients
- 12 ounces salmon fillet
- 3/4 cup finely shredded carrot
- 1 teaspoon sodium-free chicken bouillon granules
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon minced italian parsley
- 1 teaspoon minced chives
- 1/4 teaspoon salt
- 1/8 teaspoon ground white pepper
- 1/2 cup yellow cornmeal
- 2 tablespoons vegetable oil
How To Make salmon-carrot nuggets

Step 1Cube salmon fillet and put in food processor; process until nearly smooth. Transfer to a bowl; add the next 8 ingredients (carrot through white pepper). Stir until well combined. Shape into nuggets. Roll nuggets in cornmeal

Step 2Heat oil in non-stick skillet over medium heat. Add nuggets; cook about 3 minutes per side or until lightly browned
