Salmon Cakes with Red Pepper Relish



My grandfather was a fisherman, so we would have alot of fish for dinner. On day we didnt have fresh salmon, just the my mom used it in this recipes and It turned out just as good..

  • 3/4 c
    roasted red bell peppers, drained and chopped
  • 2 Tbsp
    chopped flat-leaf parsley
  • 2 tsp
    grated lemon zest, divide
  • 1 Tbsp
    lemon juice
  • 3 tsp
    olive oil divide
  • 1 clove
    garlic, minced
  • 3 can(s)
    ( 6 ounce each) skinless boneless salmon, drained and crumbled
  • 1/4 c
    plain dried bread crumbs
  • 1/4 c
    finely chopped scallions or green onions
  • 1 medium
    egg white
  • 1/4 tsp
    black pepper

How to Make Salmon Cakes with Red Pepper Relish


  1. To make Red Pepper Relish,stir together bell peppers, parsley, 1 tsp of lemon zest, lemom juice, 1 tsp of olive oil and garlic in a small bowl and set aside.
  2. Combine salmon, bread crumbs, scallions, egg white , pepper, remaining 1 tsp lemon zest in med bowl and stir gently to mix. Divide into 8 equal portions( about 1/3 cup each) shape into cake.( 2 1/2-icnhes in diameter) pressing to maintain shape.
  3. Heat 1 tsp remainnig oil in large nonstick skillet over meduim heat. Add cakes and cook 3 to 4 minutes on each side or until golden brown. Repeat with remaining 1 tsp of oil and remaining cakes. Serve with Red Pepper Relish.
