salmon cakes with red pepper relish
My grandfather was a fisherman, so we would have alot of fish for dinner. On day we didnt have fresh salmon, just the canned.so my mom used it in this recipes and It turned out just as good..

Ingredients
- 3/4 cup roasted red bell peppers, drained and chopped
- 2 tablespoons chopped flat-leaf parsley
- 2 teaspoons grated lemon zest, divide
- 1 tablespoon lemon juice
- 3 teaspoons olive oil divide
- 1 clove garlic, minced
- 3 cans ( 6 ounce each) skinless boneless salmon, drained and crumbled
- 1/4 cup plain dried bread crumbs
- 1/4 cup finely chopped scallions or green onions
- 1 medium egg white
- 1/4 teaspoon black pepper
How To Make salmon cakes with red pepper relish

Step 1To make Red Pepper Relish,stir together bell peppers, parsley, 1 tsp of lemon zest, lemom juice, 1 tsp of olive oil and garlic in a small bowl and set aside.

Step 2Combine salmon, bread crumbs, scallions, egg white , pepper, remaining 1 tsp lemon zest in med bowl and stir gently to mix. Divide into 8 equal portions( about 1/3 cup each) shape into cake.( 2 1/2-icnhes in diameter) pressing to maintain shape.

Step 3Heat 1 tsp remainnig oil in large nonstick skillet over meduim heat. Add cakes and cook 3 to 4 minutes on each side or until golden brown. Repeat with remaining 1 tsp of oil and remaining cakes. Serve with Red Pepper Relish.
