A great recipe given to me by a friend in Washington state. She always makes hers with fresh caught salmon from her local market.

Ingredients
- 8 ounces canned salmon, drained
- 1/4 cup sliced scalions
- 1/4 cup red bell pepper, diced
- 6 - unsalted crackers, crushed
- 2 tablespoons plus 2 tsp mayonnaise
- 2 teaspoons fresh lemon juice
- 2 dashes hot pepper sauce
How To Make salmon cakes

Step 1In medium bowl, combine all ingredients, mashing salmon bones with fork.

Step 2Shape evenly into 4 cakes.

Step 3Spray a medium nonstick skillet with cooking spray. heat over medium heat.

Step 4Add salmon cakes; cook 8 min., turning once or twice, till lightly browned on both sides.
