A great recipe given to me by a friend in Washington state. She always makes hers with fresh caught salmon from her local market.

Ingredients

  • 8 ounces canned salmon, drained
  • 1/4 cup sliced scalions
  • 1/4 cup red bell pepper, diced
  • 6 - unsalted crackers, crushed
  • 2 tablespoons plus 2 tsp mayonnaise
  • 2 teaspoons fresh lemon juice
  • 2 dashes hot pepper sauce

How To Make salmon cakes

  • Step 1
    In medium bowl, combine all ingredients, mashing salmon bones with fork.
  • Step 2
    Shape evenly into 4 cakes.
  • Step 3
    Spray a medium nonstick skillet with cooking spray. heat over medium heat.
  • Step 4
    Add salmon cakes; cook 8 min., turning once or twice, till lightly browned on both sides.
