This was my Dad's favorite fish recipe and I was happy to fix it everytime he visited.

Ingredients
- 2 tablespoons margerine
- 1 medium onion, sliced
- 3/4 cup pimento stuffed olives, sliced
- 16 ounce cans stewed tomatoes, italian-style
- 1 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1 1/2 pounds flounder filets
How To Make poached fish in succulent sauce

Step 1Melt margerine in a large skillet. Add onion and cook until tender. Stir in tomatoes (with liquid), olives, salt and pepper.

Step 2Arrange fish filets on top. Reduce heat to low. Cover and simmer for about 15 minutes (until fish flakes easily when tested with a fork.)

Step 3Serve with rice or noodles. Enjoy!!
