pineapple salmon
I got this recipe from my brother, who is a salmon afficionado. It's quite easy to prepare and is a really different slant on this great fish. It is best served on top of brown rice or yellow grits.

Ingredients
- 2 - salmon filets (preferably skinless)
- 1 can 8 oz pineapple chunks
- 1 cup raspberrie walnut vinagrette dressing
- 1 tablespoon honey mustard
- 2 teaspoons prepared horseradish
- - cooking spray
- - lemon pepper seasoning
How To Make pineapple salmon

Step 1Combine pineapple, vinagrette, honey mustard and horseradish and set aside.

Step 2Heat large frying pan to medium. Coat both sides of salmon with cooking spray and sprinkle both sides with lemon pepper. Place fish in hot pan and cook for 3 minutes.

Step 3Turn filets over and pour vinagrette/pineapple mixture over them. Cover and cook 5-7 minutes.

Step 4Serve on top of rice or grits.
