pineapple salmon

I got this recipe from my brother, who is a salmon afficionado. It's quite easy to prepare and is a really different slant on this great fish. It is best served on top of brown rice or yellow grits.

Ingredients

  • 2 - salmon filets (preferably skinless)
  • 1 can 8 oz pineapple chunks
  • 1 cup raspberrie walnut vinagrette dressing
  • 1 tablespoon honey mustard
  • 2 teaspoons prepared horseradish
  • - cooking spray
  • - lemon pepper seasoning

How To Make pineapple salmon

  • Step 1
    Combine pineapple, vinagrette, honey mustard and horseradish and set aside.
  • Step 2
    Heat large frying pan to medium. Coat both sides of salmon with cooking spray and sprinkle both sides with lemon pepper. Place fish in hot pan and cook for 3 minutes.
  • Step 3
    Turn filets over and pour vinagrette/pineapple mixture over them. Cover and cook 5-7 minutes.
  • Step 4
    Serve on top of rice or grits.
