- 1.3 pounds filleted fish, (pilot fish if available)
- 3/4 pound cherry tomatoes
- 1 ounce desalted capers
- 1 tablespoon italian parsley
- - white wine
- - oregano
- - extra virgin olive oil
- - salt and pepper
How To Make pilot fish (fanfri) in white wine

Step 1Wash and dry the fillets, then arrange them in a pan.

Step 2Sprinkle with salt, pepper, chopped parsley and oregano and lace with oil.

Step 3Add the diced tomatoes and the desalted capers and sprinkle with half glass of white wine.

Step 4Place the pan over the heat and cook for 5 minutes.

Step 5urn the fish and continue cooking for another 5 minutes.

Step 6Serve piping hot.
