Ingredients

  • 4 - fillets of red snapper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cayenne pepper
  • 1 - lime or lemon
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 - tomatoes...seeded & diced
  • 3 cloves garlic cloves...smashed
  • 1 sprig parsley
  • 1 sprig cilantro

How To Make pan seared red snapper

  • Step 1
    combine all the dry ingredients, to make a dry rub. rub the skin side with the mixture.
  • Step 2
    in a medium-high skillet, place the butter & olive oil, place fish skin side down...4 mins... turn and finish 2 more mins.
  • Step 3
    meanwhile, make the topping smashed garlic, diced tomatoes, juice of lime or lemon, parsley & cilantro, olive oil
  • Step 4
    take fish out and pour topping
