Ingredients
- 8 - sandwich thin wholewheat mini's
- TUNA CAKE
- 2 cans tuna, packed in water (albacore tuna fillet)
- 1/3 cup panko bread crumbs
- 1 large egg
- 2-3 tablespoons mayonnaise
- 1/2 small onion chopped
- 1 1/2 tablespoons sun dried tomatos, chopped
- 1 medium celery stalk, chopped
- 2 teaspoons greek seasoning
- 1 teaspoon black pepper
- TOPPINGS
- 1 small avocado, sliced (add a little lemon juice)
- 8 slices bacon, cooked
- 2 small roma tomatoes, sliced
- 1 small cucumber, sliced
- TOMATO BLUE CHEESE SPREAD
- 1/4 cup mayonnaise
- 1 tablespoon tomato paste
- 2 ounces gorgonzola cheese, crumbles

Step 2in a neduim sized bowl combine all tuna cake ingredients

Step 4add olive oil to a heated skillet, fry patties 2-3 minutes on each side

Step 5in a small bowl combine tomato blue cheese spread ingredients. Build your mini's: spread tomato blue cheese spread on all slices of bread...add bacon, tomato, avocado, a tuna cake, cucumber slices and top with bread slice. Enjoy!
