orange roughy almondine

this is my all time favorite "baked fish" dish. we served a prepared "cod almondine" when I worked at the school, and I applied what I thought to orange roughy. It is delicious.

Ingredients
- 4 ounces orange roughy filets ( or more)
- 1 slice day old bread, for crumbs
- 1/2 teaspoon each garlic salt, pepper, salt
- 1 tablespoon lemon juice
- 1 teaspoon melted margarine
- 1/8 cup thin almond slices
How To Make orange roughy almondine

Step 1spray a shallow baking pan with cooking spray, or use non-stick foil (which I prefer)

Step 2lay fillet on pan. sprinkle lemon juice over fillet, then the seasonings.

Step 3melt margarine and toss with bread crumbs. sprinkle over fillet.

Step 4place almonds on top of crumbs.

Step 5bake at 350 degrees, covered with foil the first 10 minutes, then remove foil and bake an additional 20 minutes until fish is flaky and crumbs are golden.

Step 7you can use prepared bread crumbs and also use the new "butter spray" if you are watching your calories more closely. I've used both.And this works with any "baked fish" tilapia, cod, alaskan pollock.
