This recipe uses leftover mashed potatoes and cooked fish, so it is really quick to prepare. My mom used to make a version of this whenever she had leftover mashed potatoes.

Ingredients For north shore fish cakes

  • 11/3 c
    chopped green onions
  • 1-2 Tbsp
    butter, melted
  • 2 c
    mashed potatoes
  • 2 Tbsp
    butter, melted
  • 1 Tbsp
    sour cream
  • 1 lb
    orange roughy or other white fish fillets, cooked and flaked
  • 1 lg
    egg, lightly beaten
  • 2-3 Tbsp
    fresh parsley, minced
  • 1/2 tsp
    dry mustard
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper
  • 1/2-3/4 c
    italian-seasoned breadcrumbs
  • 2 Tbsp
    butter
  • 1 Tbsp
    olive oil

How To Make north shore fish cakes

    Saute green onions in 1 to 2 tablespoons butter in a large skillet over medium heat until tender. Set aside.

    Combine the mashed potatoes, 2 tablespoons butter, and sour cream in a medium bowl; stir well. Add fish, stirring gently. Set aside.

    Combine the egg and the next 4 ingredients in a bowl; stir in the reserved green onions. Add to the fish mixture; stirring gently.

    Shape fish mixture into 8 patties. Dredge in the breadcrumbs. Fry patties in 2 tablespoons butter and olive oil in a large skillet over medium-high heat for 3 minutes on each side or until ightly browned.
