Mumma's Salmon Patties

Cynthia Hurt

My daughter, Ceejay, hates seafood, but loves her Mumma's Salmon Patties. She has been eating salmon patties made like this since she was a little girl, and at 23, she still asks me to cook salmon patties for her. If you like home cooking, you will love these salmon patties too. Cynthia Vickery Hurt

1 can(s)
salmon, canned
1 large
1 tsp
olive oil
1 pinch
salt and pepper
1 1/2 c
self rising flour

1Drain salmon and debone. Take off all gray parts of salmon and disregard with bone. Put flour, salt and pepper, and olive oil into a bowl and stir. Then take fork and stir egg together into mixture adding salmon last.Stir all ingredients together and lift out enough to make a small round patty and mold and put into grease one at a time.
2Put enough Olive Oil in a frying pan to fry salmons. Fry the patties on medium heat. Cook only on each side long enough for patty to turn light or golden brown. Patties are terrific! Great with rice, salads and any kind of pasta.
