Ingredients For mediterranean fish fillets

1 tspolive oil, extra virgin

1 smonion, thinly sliced

2 Tbspdry white wine
-
1 clovegarlic, finely chopped

1 ccanned diced tomatoes
-
4kalamata (greek) olives, chopped
-
1/8 tspdried oregano
-
1/8 tsporange zest
-
1/4 tspsalt, divided
-
1/4 tspblack pepper, divided

8 ozfirm flesh fillets
How To Make mediterranean fish fillets

1Preheat oven to 450 F

2Heat oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring often, until lightly browned, 2 to 4 minutes.

3Add wine and garlic. Simmer for 30 seconds.

4Stir in tomatoes, olives, oregano and orange zest.

5Season with 1/8 teaspoon each of salt and pepper.

6Season fish with remaining salt and pepper. Arrange fish in a baking dish. Spoon tomato mixture over fish.

7Bake uncovered 10 to 20 minutes.
