Ingredients
- 1 teaspoon olive oil, extra virgin
- 1 small onion, thinly sliced
- 2 tablespoons dry white wine
- 1 clove garlic, finely chopped
- 1 cup canned diced tomatoes
- 4 - kalamata (greek) olives, chopped
- 1/8 teaspoon dried oregano
- 1/8 teaspoon orange zest
- 1/4 teaspoon salt, divided
- 1/4 teaspoon black pepper, divided
- 8 ounces firm flesh fillets
How To Make mediterranean fish fillets

Step 1Preheat oven to 450 F

Step 2Heat oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring often, until lightly browned, 2 to 4 minutes.

Step 3Add wine and garlic. Simmer for 30 seconds.

Step 4Stir in tomatoes, olives, oregano and orange zest.

Step 5Season with 1/8 teaspoon each of salt and pepper.

Step 6Season fish with remaining salt and pepper. Arrange fish in a baking dish. Spoon tomato mixture over fish.

Step 7Bake uncovered 10 to 20 minutes.
