  • 1 tsp
    olive oil, extra virgin
  • 1 small
    onion, thinly sliced
  • 2 Tbsp
    dry white wine
  • 1 clove
    garlic, finely chopped
  • 1 c
    canned diced tomatoes
  • 4
    kalamata (greek) olives, chopped
  • 1/8 tsp
    dried oregano
  • 1/8 tsp
    orange zest
  • 1/4 tsp
    salt, divided
  • 1/4 tsp
    black pepper, divided
  • 8 oz
    firm flesh fillets

How to Make Mediterranean Fish Fillets


  1. Preheat oven to 450 F
  2. Heat oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring often, until lightly browned, 2 to 4 minutes.
  3. Add wine and garlic. Simmer for 30 seconds.
  4. Stir in tomatoes, olives, oregano and orange zest.
  5. Season with 1/8 teaspoon each of salt and pepper.
  6. Season fish with remaining salt and pepper. Arrange fish in a baking dish. Spoon tomato mixture over fish.
  7. Bake uncovered 10 to 20 minutes.
  8. Enjoy!!!
