olive oil, extra virgin
1 small
onion, thinly sliced
2 Tbsp
dry white wine
1 clove
garlic, finely chopped
1 c
canned diced tomatoes
kalamata (greek) olives, chopped
1/8 tsp
dried oregano
1/8 tsp
orange zest
1/4 tsp
salt, divided
1/4 tsp
black pepper, divided
8 oz
firm flesh fillets

How to Make Mediterranean Fish Fillets


  • 1Preheat oven to 450 F
  • 2Heat oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring often, until lightly browned, 2 to 4 minutes.
  • 3Add wine and garlic. Simmer for 30 seconds.
  • 4Stir in tomatoes, olives, oregano and orange zest.
  • 5Season with 1/8 teaspoon each of salt and pepper.
  • 6Season fish with remaining salt and pepper. Arrange fish in a baking dish. Spoon tomato mixture over fish.
  • 7Bake uncovered 10 to 20 minutes.
  • 8Enjoy!!!
