Ingredients

  • 1 teaspoon olive oil, extra virgin
  • 1 small onion, thinly sliced
  • 2 tablespoons dry white wine
  • 1 clove garlic, finely chopped
  • 1 cup canned diced tomatoes
  • 4 - kalamata (greek) olives, chopped
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon orange zest
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided
  • 8 ounces firm flesh fillets

How To Make mediterranean fish fillets

  • Step 1
    Preheat oven to 450 F
  • Step 2
    Heat oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring often, until lightly browned, 2 to 4 minutes.
  • Step 3
    Add wine and garlic. Simmer for 30 seconds.
  • Step 4
    Stir in tomatoes, olives, oregano and orange zest.
  • Step 5
    Season with 1/8 teaspoon each of salt and pepper.
  • Step 6
    Season fish with remaining salt and pepper. Arrange fish in a baking dish. Spoon tomato mixture over fish.
  • Step 7
    Bake uncovered 10 to 20 minutes.
  • Step 8
