maple-chili fish skewers
I'm from the mid-west and my family THINKS they only like fish one way...fried! I'm on a mission to change their mind. I know they won't even want to touch it if it tastes "too fishy" or if it looks white and plain. So, I came up with this recipe...full of flavor and with a nice mahogany glazed coating...and it worked! They all(well almost all) loved it and asked for seconds!

Ingredients
- 2 pounds firm white fish( i used cod) cut in 1 in. cubes
- 1/2 cup olive oil
- 1/4 cup pure maple syrup
- 1 tablespoon dried parsley
- 3 teaspoons chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground pepper
How To Make maple-chili fish skewers

Step 1If using bamboo skewers soak 20 min. prior to assembling. Preheat broiler and place rack 4-6in. from heat.

Step 2Combine all ingredients except for the fish in a small bowl and whisk to combine. Place fish in a large zipper bag. Pour marinade over fish and turn the bag a few times to coat fish on all sides.

Step 3Thread 5 or 6 chunks of fish onto each skewer. Broil 4-6 in. from heat for 5-10 min.(depends on oven and thickness of fish), then turn skewers and broil 5-10 min. on other side. You want the fish to flake easily and to be nicely browned. Great served on a bed of rice with a nice veggie on the side!
