Maple-Chili Fish Skewers

Ingredients

2 lbfirm white fish( i used cod) cut in 1 in. cubes

1/2 colive oil
-
1/4 cpure maple syrup
-
1 Tbspdried parsley
-
3 tspchili powder
-
1/2 tspcumin
-
1/4 tspgarlic powder
-
1/4 tsponion powder
-
1/4 tspsalt
-
1/8 tspground pepper
How to Make Maple-Chili Fish Skewers
- If using bamboo skewers soak 20 min. prior to assembling. Preheat broiler and place rack 4-6in. from heat.
- Combine all ingredients except for the fish in a small bowl and whisk to combine. Place fish in a large zipper bag. Pour marinade over fish and turn the bag a few times to coat fish on all sides.
- Thread 5 or 6 chunks of fish onto each skewer. Broil 4-6 in. from heat for 5-10 min.(depends on oven and thickness of fish), then turn skewers and broil 5-10 min. on other side. You want the fish to flake easily and to be nicely browned. Great served on a bed of rice with a nice veggie on the side!
