Ingredients

  • 1 - garlic clove
  • 1/2 teaspoon thyme
  • 1/2 - onion, chopped
  • 1/4 pound cod, cut in 1" cubes
  • 2.5 cups tomatoes, canned and chopped, with liquid
  • 1/4 pound scallops, in 1" pieces
  • 1 - bay leaf
  • 1/4 pound shrimp, cleaned and deveined
  • pinch cayenne pepper
  • pinch salt
  • pinch pepper
  • 1/8 teaspoon fennel seed, optional

How To Make low fat seafood stew

  • Step 1
    Combine tomatoes, garlic, onion, and seasoning in saucepan; simmer for 10 minutes.
  • Step 2
    Add cod and simmer gently for 2 minutes, add scallops and simmer 2 minutes, add shrimp and simmer 3-5 minutes, just until shrimp turns pink.
  • Step 3
    SUBSTITUTIONS: May use basil or oregano in place of thyme. Use any white, firm-fleshed fish for this recipe... Does not have to be cod.
