  • 1/2
    onion, chopped
  • 1/4 lb
    cod, cut in 1" cubes
  • 2.5 c
    tomatoes, canned and chopped, with liquid
  • 1/4 lb
    scallops, in 1" pieces
  • 1
    bay leaf
  • 1/4 lb
    shrimp, cleaned and deveined
  • pinch
    cayenne pepper
  • pinch
    salt
  • pinch
    pepper
  • 1/8 tsp
    fennel seed, optional

How to Make Low Fat Seafood Stew

Step-by-Step

  1. Combine tomatoes, garlic, onion, and seasoning in saucepan; simmer for 10 minutes.
  2. Add cod and simmer gently for 2 minutes, add scallops and simmer 2 minutes, add shrimp and simmer 3-5 minutes, just until shrimp turns pink.
  3. SUBSTITUTIONS: May use basil or oregano in place of thyme. Use any white, firm-fleshed fish for this recipe... Does not have to be cod.
