Ingredients
- 1 - garlic clove
- 1/2 teaspoon thyme
- 1/2 - onion, chopped
- 1/4 pound cod, cut in 1" cubes
- 2.5 cups tomatoes, canned and chopped, with liquid
- 1/4 pound scallops, in 1" pieces
- 1 - bay leaf
- 1/4 pound shrimp, cleaned and deveined
- pinch cayenne pepper
- pinch salt
- pinch pepper
- 1/8 teaspoon fennel seed, optional
How To Make low fat seafood stew

Step 1Combine tomatoes, garlic, onion, and seasoning in saucepan; simmer for 10 minutes.

Step 2Add cod and simmer gently for 2 minutes, add scallops and simmer 2 minutes, add shrimp and simmer 3-5 minutes, just until shrimp turns pink.

Step 3SUBSTITUTIONS: May use basil or oregano in place of thyme. Use any white, firm-fleshed fish for this recipe... Does not have to be cod.
