lo-carb salmon patties
I modified a salmon loaf recipe to fit the lo-carb lifestyle. I made it salmon patties so that it wouild be more manageable for one or two people. I have linked it to my Italian Baked Asparagus recipe since I have them pictured together.

Ingredients
- 1 can salmon, drained and cleaned - save liquid
- 1 - egg
- - liquid from salmon + milk to make 3/4 cup total liquid
- 1 cup pork rind crumbs
- 2 tablespoons lemon juice
- 1 tablespoon dried or fresh chopped onion
- 1 tablespoon dried parsley
- 1/4 teaspoon each, salt and pepper
How To Make lo-carb salmon patties

Step 1Drain salmon and reserve liquid. Clean salmon.

Step 2Add egg.

Step 3Add salmon liquid.

Step 4Process Pork Rinds in Food Processor to make crumbs. Add to mixture.

Step 5Add lemon juice, onion, parsley and salt and pepper.

Step 6Stir mixture, adding heavy whipping cream if mixture is too dry toform into patties.

Step 7Form into patties and fry in olive oil at a medium to medium low heat until golden brown.

Step 8Serve with lemon wedges.
