This is a perfect dish to make during the summer months when you don't feel like using your oven. I got this recipe from the back of a can of salmon. I like to add a small serving of rice (whatever kind you like) and pair it with a side of fresh fruit. This is a quick and simple recipe that allows you to get out of the kitchen in no time!

Ingredients

  • 1 can(s)
    salmon
  • 1/4 c
    plus 2 tablespoons mayo, divided
  • 1
    egg white
  • 1 Tbsp
    lemon juice
  • 1 tsp
    seasoned salt
  • 2 tsp
    margarine or butter
  • 1 tsp
    dijon-style mustard

How to Make Light-Style Alaska Salmon Croquettes

Step-by-Step

  1. In a medium bowl, combine salmon, 1/4 c. mayonnaise, bread crumbs, green onions, egg white, lemon juice and seasoning. Mix well; shape into 4 - 1/2 inch thick patties.
  2. Melt margarine in a lg. non-stick skillet over medium heat until hot. Add salmon croquettes; cook 3-4 minutes per side or until golden brown.
  3. Meanwhile, combine remaining 2 T. mayonnaise and mustard. Serve sauce and lemon wedge with croquettes.
