1/4 cplus 2 tablespoons mayo, divided
1 Tbsplemon juice
1 tspseasoned salt
2 tspmargarine or butter
1 tspdijon-style mustard
How to Make Light-Style Alaska Salmon Croquettes
- In a medium bowl, combine salmon, 1/4 c. mayonnaise, bread crumbs, green onions, egg white, lemon juice and seasoning. Mix well; shape into 4 - 1/2 inch thick patties.
- Melt margarine in a lg. non-stick skillet over medium heat until hot. Add salmon croquettes; cook 3-4 minutes per side or until golden brown.
- Meanwhile, combine remaining 2 T. mayonnaise and mustard. Serve sauce and lemon wedge with croquettes.
