light-style alaska salmon croquettes

This is a perfect dish to make during the summer months when you don't feel like using your oven. I got this recipe from the back of a can of salmon. I like to add a small serving of rice (whatever kind you like) and pair it with a side of fresh fruit. This is a quick and simple recipe that allows you to get out of the kitchen in no time!

Ingredients

  • 1 can salmon
  • 1/4 cup plus 2 tablespoons mayo, divided
  • 1 - egg white
  • 1 tablespoon lemon juice
  • 1 teaspoon seasoned salt
  • 2 teaspoons margarine or butter
  • 1 teaspoon dijon-style mustard

How To Make light-style alaska salmon croquettes

  • Step 1
    In a medium bowl, combine salmon, 1/4 c. mayonnaise, bread crumbs, green onions, egg white, lemon juice and seasoning. Mix well; shape into 4 - 1/2 inch thick patties.
  • Step 2
    Melt margarine in a lg. non-stick skillet over medium heat until hot. Add salmon croquettes; cook 3-4 minutes per side or until golden brown.
  • Step 3
    Meanwhile, combine remaining 2 T. mayonnaise and mustard. Serve sauce and lemon wedge with croquettes.
