This recipe makes any white fish juicy and delicious. It makes a fantastic meal when served with white jasmine rice and steamed broccoli or asparagus.

If you're looking to incorporate more fish into your diet, add this baked cod to your menu. The batter is light and crisps up in the oven. Paprika adds a touch of color and flavor to the fish. Once baked, the cod is perfectly flaky. Just make sure to shake the excess flour off the cod before baking, so the coating does not end up soggy.

Ingredients For lemon butter baked cod

  • 2 lb
    cod fillets (or any white fish)
  • 1/4 c
    butter or margarine
  • 2 Tbsp
    lemon juice
  • 1/4 c
    all-purpose flour
  • salt and pepper, to taste
  • dash
  • parsley
  • lemon wedges, for serving

How To Make lemon butter baked cod

  • Cod cut into pieces.
    Preheat the oven to 350 degrees F. Cut the cod fillets into serving sizes.
  • Lemon juice and melted butter in a dish.
    Melt butter in a saucepan or microwave. Add the lemon juice to the melted butter.
  • Flour, salt, and pepper in another dish.
    In another dish, mix together the flour, salt, and pepper.
  • Dipping cod into the lemon butter mixture.
    Dip the fish into the butter/lemon mix, coating well on all sides.
  • Dipping cod into the flour mixture.
    Dip the buttered cod into the flour mix, coating well on all sides. Shake the excess flour off each piece of fish.
  • Pieces of cod in a baking dish.
    Place the coated cod fillets in an ungreased baking dish.
  • Butter poured over the dish sprinkled with paprika.
    Drizzle the remaining butter mixture over the fish. Sprinkle the entire dish with paprika.
  • Cod baking in the oven.
    Bake, uncovered for 25-30 minutes. Fish should flake easily with a fork.
  • Lemon Butter Baked Cod on a plate with lemon slices.
    Garnish with parsley and lemon wedges.
