lemon baked whitefish
You can use tilapia, cod, halibut any whitefish in this recipe. It turns a gold brown colour and the hint of lemon comes through and is just enough to delight any palate. I served this along side my spicy Potato Salad.

Ingredients
- 1 pound white fish fillets
- 1/4 cup earth balance, melted
- 2 tablespoons lemon juice
- 1/4 cup spelt flour
- 1/2 teaspoon sea salt
- 1/8 teaspoon white pepper

How To Make lemon baked whitefish

Step 1Cut fish into 3" pieces.

Step 2Melt the Earth Balance and add the lemon juice

Step 3In another bowl mix the spelt flour, salt and pepper.

Step 4Dip the fish into the Earth Balance/lemon mixture, then roll in the flour.

Step 5Place in an un-greased baking dish with at least 1" sides. Pour the remaining Earth Balance/lemon mixture over the fish.

Step 6Bake uncovered at 350'F for about 25-30 minutes or until fish is flaky but not dry.

Step 7Garnish with parsley and lemon slices if desired.
